What's cookin', good lookin'? Part II

Saint George’s mushrooms with bacon and chives on toast and a simple salad with various green leafy things, pickled radishes and cucumber.
 
Pasta salad. I wanted to make potato salad but I have no potatoes and didn't want to go buy them, so I used pasta instead of potatoes. It was a pretty good substitute for the potato salad craving.

Pasta, radishes, cucumber, red onion, chives, dill, mint, lemon (zest and juice), olive oil, white balsamic. I had it with a soft boiled egg and some croutons.

I’m making chicken meatballs with feta and dill, green beans, carrot tzatziki, shredded cabbage and pitas. 🥙
 
As midsummer will be spent in a way I’m not so thrilled about, I made a little midsummer feast for myself yesterday.

Smoked salmon

Deviled egg
Chicken liver
Cherry compote

This only counts as cooking because I boiled the egg, but I made a cobbled-together Cobb salad out of stuff I had here on hand already--salad greens with carrots, tomatoes, cucumbers, boiled egg, deli meat ham, and croutons with ranch dressing. Crap, I just realized I forgot to put cheese on it, lol. Oops.

Anyway, dessert is going to be a fresh plum.

Later in the week, I'm making a cherry cream cheese pie thing. I got the ingredients today!

What’s the status of the cherry cream cheese pie thing? I love cherry things, but they’re not common here.

I baked a bread again. The upside of a freezing summer is that I can still bake and generally use the oven comfortably without the apartment becoming an instant hell hole.

Meal prepped for the work week, Monday and Tuesday are my weekend. Smoked some tofu and diced up some veggies and dropped the lot into a sauce made from whatever I had in the kitchen. It turned out like a very spicy Yum yum sauce, I guess. Made a quick cheese, yeah, I sometimes make my own cheese. Baked a bunch of tart apples smothered in a butter, brown sugar, and honey glaze. I might cook up some sweet black rice before work, but not yet sold on the idea without a bit of meat to toss in. No meat as I didn't make it to the butcher shop this week. I could go for some rabbit, veal or lamb, though.

Actually, I'm going to have to do it tomorrow because my dumb ass didn't think to put the can of cherry pie filling in the refrigerator until now.

I got the bottom part of the pie made! (You have to let it set in the refrigerator or freezer for a bit before you put the topping on it.)

Recipe, if anyone is interested. It's stupid easy. (I wouldn't bother with it if it weren't. The hardest thing is remembering to refrigerate the pie filling.)



Ingredients:

8 oz. (226 g. is what it says on the box) block of cream cheese

14 oz. (396 g. on can) can of condensed milk

Lemon juice (Recipe actually calls for 1/4 c. [59 ml. according to Google], but I put more like 1/2 c. [118 ml. according to Google] because I like mine tart; I used bottled lemon juice, but I don't see any reason you couldn't use fresh lemon juice if you wanted to)

Vanilla flavoring to taste (I use a bunch, with flagrant disregard for anything like measuring)

Can of pie filling of your choice (I went with cherry; the size on the can was 20 oz. [567 g. on can]; you can probably also make your own pie filling from fresh fruit if you have a recipe you like)

Graham cracker pie crust (I bought one, but you can make your own)



How to make:

Refrigerate pie filling for at least 4 hours total.

Let cream cheese soften for 30 mins.-1 hour.

Beat cream cheese with mixer.

Add condensed milk and beat again.

Add lemon juice and vanilla and mix until there are no lumps.

Put mixture in pie crust and chill in refrigerator to set for 3-4 hours or freezer for 1-2. (Try not to let the mixture freeze if you're using the freezer method.)

After mixture has chilled and set, add refrigerated pie filling to the top and return to refrigerator.

Let chill a little while, and then enjoy!



I plan on having some soon. I'll try to remember to snap a pic after I add the topping, but before I cut it, lol.

I would've taken a picture of the first piece I cut, too, but the first piece of this pie never comes out pretty. It's always a mess, lol.

It's really good. Tart, just the way I like it!

This looks delicious! I’d happily come over for a slice.

I’ve never made a cherry pie myself. But today I’ll bake a rhubarb one.
