What's cookin', good lookin'? Part II

BBQ country-style ribs (these are the only kind of "ribs" I like, even though they're technically not ribs at all; I think they're a cut of shoulder or something, not sure)

Cheddar broccoli pasta (from a package, I'm lazy)

Baked beans (from a can, see above about laziness)

Garlic bread (one piece, frozen, lazy)

Side salad

It's really good!

A rib that’s not a rib? Interesting, I’ll have to investigate. Personally I’m not a big fan of ribs either, but maybe this fake rib could be my solution as well?

I’ll make Vietnamese-ish lettuce wraps for lunch today.

Dinner will be meatballs with mashed potatoes, pickles, lingonberries and gravy. Grated carrots for a salad. Old school, so yum.
 
Meatloaf over a bed of rice (which I realize is weird, but I like it that way), green beans, and my odd little concoction of potatoes, yellow squash, and green tomatoes all pan fried together (didn't have any onion for it this time, so I just added a dash of onion powder and salt to it when it came out of the grease). It's good!
 
Today, I did fried chicken thighs, boiled squash (because I'm predictable), candied sweet potatoes (see predictable), green beans, a pesto pasta side that was leftover from yesterday, and slices of (red) tomato and cucumber. I absolutely laid waste to it, lol.
 
I made meatballs and an asparagus quiche for what’s likely to be a very cold picnic brunch tomorrow. I’ll bake fresh bread and make a couple of kinds of dips tomorrow morning to take with me as well. And naturally homemade mead is in the fridge ready to go.

It’s been a few years since I’ve participated in the traditional May 1 picnic scene with my friends, because I got tired of always freezing. But this year I was told I’m not allowed to sit out.

Today’s yum was sushi and sake.

If I can EVER make a meatloaf as good as my mom can, only then, will I consider myself a success in the kitchen.
 
Leftover supreme:

Couscous salad with roasted eggplant and carrots, radishes and green beans, a few bites of chicken, yogurt sauce, cilantro, lemon.

I love meals where you can dump all your leftover bits and bops together and have it still resemble an actual dish.
 
Gochujang chicken with rice, pickled radishes, marinated cucumber slices and sesame carrots.
 
A smallish ribeye and because I am, as I have mentioned before, predictable af, a baked sweet potato and green beans, lol. But this steak, I actually managed to fuck around and cook perfectly medium, which is the way I like them. It's extremely good.

Green beans are so good. How do you make yours?

It’s getting closer to summer here and a local producer will soon start pumping out green beans. I’m so looking forward to it! And asparagus!

I love green beans, but honestly, I usually just use canned or frozen ones for convenience. I would love some fresh ones, though! Asparagus also sounds yummy.

True, the frozen ones are very easy to use and that’s my go to as well when there are no fresh ones available and I get the green bean hankering. The fresh ones are divine, though. 🤩

Today is a Slovakia theme day. On the menu is strapačky and cherry jam filled pírohy with poppyseeds for dessert. The food will be devoured on the couch while watching the 1922 version of Nosferatu, which was largely filmed in Slovakia, most notably in the Orava castle.

It’s about a week until my trip to Slovakia, so I’m setting the mood, and in case it’s not clear, I can’t wait!

I’m gonna eat so many yummy things and see so many pretty places there.

Apologies for taking the picture on the top of my dryer. It was the only surface in my kitchen not covered with other stuff already. Anyway, that there is smoked turkey tail over egg noodles with gravy, squash with cornbread stuffing, seasoned mustard greens, fried okra, and a bunch of little tomatoes. I haven't even tasted it yet; I'm waiting for it to cool, lol. But I was excited and wanted to share it with y'all. :heart:

Edit: It all turned out pretty good. I had never had turkey tails before, and they're not bad. The only thing is, the greens are lacking a little something. The rest is good. The squash is banging. Love!

I've cleaned many wild turkeys, but I have to say, it never crossed my mind to try the tails. Interesting.

My mom got a "mystery grab box" of meat the other day, and both the ham hocks I put in the greens and the turkey tails were in there. She's not adventurous at all, food-wise, so she gave them to me. I googled how you're supposed to prepare them, and that's what I got, lol.

They're not bad. They don't have a lot of meat on them--more than a wing, but less than a leg--but if you don't care for dark meat, you probably wouldn't be a fan.

I suspected they might be mostly fat.
On a parallel topic, you know what really squicks me out? Chicken feet. Nasty!
 
Turkey tails! I never imagined they could be eaten! Very cool, and so good that you’re trying new things, Bunny.

I think it’s super important to use the animal in its entirety when it’s killed.
