Bolognese, extra vinegar for acidity and a stirred in chutney after the tomatoes have reduced well.

While chopping the veg at the start I'll mince the garlic too, then smoothe it together with a little oil and salt and let it sit to break itself down until the last 5 mins of cooking, then either add it to the sauce or pasta. (Fair warning, this makes the flavour go  crazy. I cannot warn you enough how garlicky this gets)

Also, spices before the protein, herbs after the tomato ❤️
