Sometimes (more so in the past few months) Skype messages just don’t show up in the chat log. I usually try to check my Lock Screen notifications first, because they’ll usually show up there. Of course sometimes I don’t get alerts at all, but there are messages in the chat log. And sometimes I have messages show on one device, but not the other Skype is broken in so many ways and I think they’ve mostly given up on any maintenance that doesn’t have to do with the transition to Microsoft Teams

You've pretty much nailed everything wrong with it, and probably why they're not putting in the effort. It was weird jumping back and forth to outlook to see if they'd replied
