Which section should a story of a submissive woman escorting / prostitution go into? I really wasn’t sure.

It could fit into a number of categories as bdsm, loving wives, cnc, etc… are there guidelines or does it not really matter.

I don't think it matters honestly, but what you feel is the best fit! For a story like that I might use bdsm primarily. Especially if the character did scenes with clients. Maybe fetish if there was something particular about it - i.e. petplay or something. Loving wives might make sense if she has a husband/boyfriend, either doing it on the side or with their full knowledge/support. A cuck/bull situation could go into fetish too.

I say do what you think feels right!

Sounds like BDSM is a good place, however, I see Dom/sub themes in many other categories. Go with your intuition....and let us know when you publish...............
