The popular explanation for the explosive rise in step-family or outright incest porn/erotica over the past few years, is that it's just more realistic and likely to happen, which makes it more alluring. Gone are the days of premises (which I'm just old enough to remember) like the pizza delivery guy packing 'extra sausage' or the plumber on a housecall that finds an extra pipe to snake. A big attraction for an erotic premise is the idea that "this could really happen."
But beyond this element (I believe), is the implicit tension involved. Hooking up with that older brother or even a father figure (as opposed to a random stranger) implies that maybe there had been smoldering attraction there, too taboo to honestly admit to yourself, but bubbling under the surface for months or years. A slow burn, building up heat and delicious pressure until finally erupting in a torrent of torn clothing and sweaty flesh and guttural cries of long-anticipated ecstasy.
I find theories like this fascinating, and have explored this area in a couple of my stories. Despite being a straight guy, I guess I have a somewhat feminine mind in this respect, as I understand that the male brain is traditionally more aroused by visuals and immediate action, whereas the female brain prefers more backstory and build up.
