Interesting. In some circles there's a reverse cachet in consuming such things...it shows a solidarity with 'the people' as opposed to 'the man' who always took the best parts of the pig and left the rest for the poor and downtrodden. For all I know it tastes good, but I doubt if I'll ever try it.

Hah! There won't be a scrap of 'solidarity food' within a country mile of that place. It'll prolly be catered by Ruth's Chris or Morton's.

I like chitlins, although they're a coronary waiting to happen. And I like pickled pigs' feet. I've never tried pigs' ears.
