Does anyone have a good chili recipe that they would like to share?
I've got one I use, I basically smushed together a bunch of different recipes until I found the magic. We like kick but not mouth-burning spiciness, so I prefer a chili that is really flavorful rather than firey. The best thing about it is that you can tweak as you like! Chili tastes are so different for everyone, so this may or may not be what you are looking for.

Chili

2 lbs. meat of your choice (I usually use 1 lb. lean ground beef and 1 lb. ground turkey, or 2 lbs. beef)
1 28oz. can diced tomatoes
1 can dark red kidney beans (or 1 cup dry, if you prefer)
1 can chopped green chiles (or jalapenos, if you like spice)
1 green bell pepper, medium dice
1 red bell pepper, medium dice
2 large onions (any color), chopped
1 cup prepared salsa (we like to use a spicy salsa for chili, so medium to hot)
6 cloves garlic, minced and divided
1.5 Tablespoons of tomato paste (if you can only get small cans, just use that and save the rest, or use more to taste- it gives it a deeper tomato flavor)
1 can condensed tomato soup
1 can water, depending on how thick you like the chili. Keep in mind it will cook down somewhat, but this is a fairly loose chili with that can of water.

To taste:

2 Tablespoons Chili powder
2 Tablespoons Cumin
A few shakes of Tabasco
Salt, pepper, garlic powder, onion powder
Optional: dried cilantro (about 1 Tablespoon)


* If you are using all ground beef and it is not the really lean kind, I would recommend browning it separately with salt, pepper, garlic powder, chili powder, and cumin (and maybe onion powder if you have it). That way you can drain off the fat before adding the meat to the chili.

**I usually cook half the garlic with the meat and half with the veggies.

***I like to leave bigger chunks when I cook it, but it's just as good if you like smaller pieces.

  • Toss the onions, peppers, and half the minced garlic in a big pot with a couple tablespoons of butter, cook for a few minutes until almost soft.
  • Add and brown the meat with the veggies if you haven't pre-cooked it. If the meat was browned separately, add it once the veggies are soft.
  • If browning meat and veggies together, toss in salt, pepper, garlic powder, chili powder, cumin, and onion powder so the meat and veggies are seasoned.
  • If there's extra fat, you can spoon it out before adding the remaining ingredients.
  • Add all remaining ingredients and simmer for at least 1 hour, or until desired thickness is reached.
  • Serve with shredded extra sharp cheddar and sour cream. I also like to make sweet cornbread to offset the savory chili.

I followed this recipe. Except I didn't have rice flour so I used 1/2 cup all-purpose, and I chopped the kimchi before adding it to the batter.

I think I have enough kimchi left over to make it again.
