I am getting kind of addicted to beef stew with sweet potatoes, leaks and carrots in it. I am sure I will turn orange.
 
Noor's Beef Stew with Sweet Potatoes

Noor's Beef stew with Sweet Potatoes for 4.

1T olive oil
1 to 1.5 lb of stew meat in 1 inch cubes
3cups water
1/2t salt
1/8t pepper
2 med carrots, cut into 1 inch pieces
1 large peeled sweet potato, cut into 1 inch pieces
1 medium stalk celery 1 inch pieces
1 leek about 1.5 inch diameter cut into 1 inch pieces
1t salt
1 dried bay leave broken in half.
2T water
1T arrowroot powder (or flour)

Directions

1) heat oil in dutch oven or large skillet. Cook beef for about 15 mins, brown on all sides.

2) add 3 cups water, 1/2 t salt and pepper. Heat to boiling, reduce heat to low. Cover and simmer for 1 to 2.5 hrs depending on cut of meat until beef is almost tender.

3) stir in veggies and other ingredients except 2T water and 1T arrowroot or flour. Cover and cook for 30 mins until veggies are done.

4) Remove bay leaf.

5) Mix 2T water with arrowroot (or flour) then stir into stew, heat to boiling, keep stirring and boil until thickened a bit, about a minute or so.

I have a 'Super' simple and fantastic recipie for Buffalo Wing cheese dip.. I can't make a big enough batch.
