Honey-roasted Parsnip Soup

25g butter, melted
500g parsnips, roughly chopped
1 each onion, carrot, roughly chopped
5 cloves garlic, roughly chopped
1 t thyme leaves
1 bay leaf
1 T clear honey
1 litre vegetable stock
150 ml dry cider
100 ml double cream

Preheat oven to 220 deg C (425F). Coat parsnips in butter and roast in oven-proof casserole dish 30 mins till golden.
Add onion, carrot, and garlic and roast further 20 mins. Mix in herbs and honey and roast about 10 mins more, till caramellised.
Remove to stovetop, add stock and bring to boil. Reduce heat and simmer for 20 mins. Remove from heat, add cider and puree with stick blender till smooth. Return to heat and bring to boil for 1 min.
Swirl in cream and serve.

Note: parsnips can be replaced with either celeriac or salsify.

I have made this with parsnip, celeriac and salsify.... all are equally good!

I would like to try this, but I can't have cider. What might be a good substitute? Maybe pure white grape juice?

The cider isn't critical. When I haven't had any, I've used apple juice, grape juice, white wine, and once I just added water (that was with celeriac.)
 
Sounds exactly like the soup I had with pork wontons (hun dun) last night. Home made wontons from a neighbourhood stall. So delicious; so much better than the frozen supermarket ones.

Since it's getting colder here in southern US, I made child which is a really good meal for colder weather. I made two batches, one bland for my wife and the other one spiced up for me. Next is stew time.

I'm hoping you made chili, and aren't discussing cannibalism in the food thread :D

Last night we went to a restaurant in a park beside a lake and had a delicious meal: a big pot of soup with huge chunks of pumpkin in it, mixed with a sweet bean that looked a little like barley. We emptied it, taking refill after refill. Pork ribs barbecued with cumin sprinkled on top. And sliced duck (left the head on the plate) with a plum sauce dip. I was not too fussed about the plate of green leafy vegetable salad (like parsley) topped with a pile of chilli peppers. I ate one bite; it was a bit strange; peppery and sour.

Toblerone choc for dessert on the way home.
 
I'm going to make chahan (fried rice) later when I get home...and I can make it good, but...this Frost Giant weather really calls for tacos. :D

but I can't make 'em because no taco stuff. :( Dunno if the stores will be closed early by the time I leave the office. I should've stocked up on shells and ground beef when I went on my supply run earlier this week, guddammit! :mad:

Would prefer them soft-shell instead of hard, but at this point, beggars can't be choosers! ;)
 
I have a halibut sandwich from the White Spot in my tummy and am getting ready for some barley wine.

Tortillas are just a simple flat bread, not so hard to make if you can't buy them :)

Best bet: go buy a kilo of big prawns, boil them up, cool them down (not hard in this weather!) and peel one by one, washing each one down with a gulp of Tsingtao beer. Singing dinky-di Aussie songs, like 'Tie Me Kangaroo Down, Sport'.

haha..thanks! But after the nightmare of 4 months getting stuff through Chinese customs, I'd have to explain the concept of Vegemite and that would just confuse the hell out of them. Just like it does to most Americans lol.

This is true. If I can make pancakes, I can make the soft-shells. *nods*

I like keeping kitchen prep minimal as possible, though. Not having to think about bread when it's already made for you makes even a little bit of work easy. And I was missing other key items. But I'll keep it in mind for future taco makin'. :D

Whilst I can sorta see their point calling it Invasion Day - it occurs to me that getting upset at n'th generation Aussies is wrong. Making it a "YOU did this to ME" thing just keeps everyone argueing about it and changes nothing.
