One of my recent favourites is fried noodles cooked with soya sauce, tomato ketchup, beans, carrot, eggs and of course, chopped onions. Doesn't take long, and is filling. The soya sauce and tomato ketchup work wonders in adding an aroma and a spicy-chilly flavour.

You can even add select dishes from last night if you're inclined, although I'd really advice anything that has a strong gravy. Chicken strips work better if you're in a hurry. Red meat if you're not.

I always chock my roast chicken up on blocks of potatoes, onions and carrots. The chicken itself is hit or miss with me, but the vegetable are awesome always. Was thinking I could just skip the chicken part.

Parboil the taters in chicken stock, then throw them into a hot roasting pan full of chicken fat, seen that done in a resort kitchen I worked in.
 
Someday I'll step my game up enough to have ho'made chicken stock on hand. I never do.

I always have homemade chicken stock. Easiest thing ever to make!
I use the chicken carcass, plus I keep all my vege offcuts (carrot skins, zucchini tops, onion skins and tops, celery root, etc) and just throw them all in a pot with water, set to simmer, and walk away.
I only season it after I've strained it and tasted.
Then it goes into 2-cup containers and into the freezer.
Nothing to it :)

Same here.

Although I use ice cube trays, and when the stock freezes I dump the cubes in a zippy bag.
 
Ever notice that white folks Always Have Homemade Chicken Stock In The Freezer? It has to be number one on the list of "But It's So Easy! Just...bla bla" cooking tips that we white folks are always giving each other when we congregate on the internet and food comes up. I think #2 is "There's No Excuse Not To Eat Your Vegetables! Just Drizzle XYZ With A Little Olive Oil And Kosher Salt And Roast In A 350 Oven!"

No, that is old world subsistence stuff, like cooking with lard.

I do make chicken stock from the carcass, but I remove the fat and dispose of it.
I pretty much have to make my own stock if I want to use any, commercial made stocks are full of bad stuff for me, besides it doesn't cost much to make your own.

I really like the peasant food. That's my main cooking interest be it American, Carribbean, Indian or what have you.

Yes, skim the fat off.
My golden rule for commercially made products is if I can't pronounce the ingredient, I won't eat it.
 
I wish someone would cook for me tonight, I am very hungry...this thread helps me not, aside from some good ideas!
 
Turkey burgers with Gruyere, scallions and Dijon...and we splurged and had them on potato buns with corn-on-the-cob and homemade maple bacon baked beans. Yum!!
 
Today I went and bought a rice cooker.

And what's rice without some curry goat?

So I also bought all the ingredients for that as well!
