All I had for dinner was a burnt grilled pimento cheese sandwich.


Tomorrow, I am cooking paella!
 
I have tswyk's high altitude cornbread recipe.

Special cornbread only cast iron pan.
Tons of butter.
 
How do you BBQ it? I need to do this now.

Low and slow (modified). I use the AKORN for that but you can use a smoker. I just used a basic pork rub on mine. But first, score the skin with a knife in 1/2 strips. There's your cracklins. And the modified low and slow means you cook a little hot to start with and then turn the cooker down. See here. I don't inject, I just used Meathead's Memphis Dust Rub.
