Take half an onion and toss it into the food processor. Add to this several large cloves of Garlic and three to four Table Spoons of "Trappey's Bull" Hot Sauce. (I use this sauce for this because while it is on the mild side it has a great flavor.) Puree until fairly smooth and spread evenly over the steak. Let marinate for at least 12 hours.
Start your spuds cooking while you fire up the grill. As soon as the grill is hot roast a couple of cloves of Garlic on it. (I roast two Elephant Ear Cloves.) When the Garlic is done remove them from the grill and allow to cool before extracting the hearts. Crush these down until they form a paste and split this paste in half.
Add half the crushed Garlic to your mashed Potatoes. (I dump it in when I am mashing the potatoes, along with some Chopped Chives and Bacon Bits. Oh and I don't use milk when I make the mashed potatoes, I use Cream Cheese.) The other half of the Roast Garlic is spread over the steak as soon as it comes off the grill.
