Where would you put a parable dealing with the striving of Lit writers for recognition as shown through the perseverance of a woman and her contribution to a potluck dinner? 1.3k words, no sex. Because of the audience I’m aiming for, I’m thinking Essays.
 
Read a few popular stories in Reviews & Essays, and in Non-Erotic. That should give you an idea of what those audiences are looking for.

Have done, but to my mind it doesn’t read like many of the N-E stories – it’s more like a New Journalism feature story ala Jimmy Breslin or Tom Wolfe.

Somehow, I don't think the categories on this website were ever really set up with 'parables' in mind.

Essay maybe but only if you say clearly that its a parable upfront. Is it funny enough to go in humour?

Gauging humor is really tough; I would say yes, but it’s really subtle. A reader in humor might just look at it and go “Huh?”
