Well considering how late it is the bread would have to be unleavened.
So, no yeast and no rise.
Indian breads are unleavened... but they involve a lot of manual labour which I am not up for at the moment.
I've baked bread in an oven from scratch, never used a bread maker.
This is sad. I do love a well-risen loaf of bread, warm from the oven, with butter and/or cheese.
I've had friends use bread makers, but never had one myself. I like my oven-baked stuff better, as a rule.

Yes, there is something about the smell of a freshly baked loaf of bread (especially if it has herbs) smothered in butter.

The only baking I do are cakes and brownies. That is how I got so fat. *snicker*
I use the bread maker to make the dough, but then I shape it and bake it in the oven.
Lately I made a lot of Jim Lahey bread that involves just sitting for 18 hours instead of kneading a lot. But I killed the oven and we're waiting for a part so Ulaven can fix it...
