I'm trying a new mac n cheese recipe in the slow cooker for tonight

Chicken Breast stuffed Sharp Cheddar Cheese and Asparagus and mashed Garlic Cauliflower with a White Wine. I've got a lot of time on my hands lol ;)

Recipe? That actually sounds great. And I have al the ingredients except the asparagus.
 
Autoimmune Cooking

Last month my wife went to the doctors, turns out she has autoimmune and thyroid issues. So we are on a grain free, dairy free, soy free, rice free, sugar free, bean free, egg free, wine free (certain vodkas are ok?) and things in the "nightshade" group free diet.

Organic meat is ok, most veggies (she's not a fan of most veggies, but, what else is there?), olive oil and coconut oils . She hasn't touch fish in years, but, it breaks up the meat monotony.

So today I went to the library and checked out the Idiot's Guide to Autoimmune Cookbook. I need more ideas than flank steak with roasted sweet potatoes. So it turns out that Ziggy Marley has a cookbook on the same shelf, so tonight it's Ziggy's Coconut Dream Fish.

I think I'll get a gold star.

Is the diet restrictions permanent? It seems like it would difficult to follow.

Advice varies. Ideally she follows it for 6 months to detox her systems, then can add in one food item a month to try and identify what's bad for her. She might be back to a full diet by the time she's 450 years old. So for right now it's been mostly oatmeal, coconut yogurt and blueberries for breakfast; steak , sweet potatoes and salad for dinner and leftovers for lunch.

I love oatmeal. It's one of my comfort foods. I like everything listed.

It seems that the nightshade family screws up a lot of people.
 
Beef stroganoff cooked in Guiness, worstechire, soy sauce and cloves. Added onions, garlic and mushrooms. Served it over butter rice with quinoa.
 
Pulled pork, pork ribs, sausage, bacon wrapped jalapeno's stuffed with cheese.
 
Man, it was great, rib eye steaks with a dry rub off the grill, mixed green salad and some green beans.
 
Burgers on the grill, corn on the cob, BBQ chips...perfect summer dinner!

I stopped in at my little local grocer for a lunch salad today. They had ocean perch fillets on sale for 5.95 per lb. So I went back after work and bought a pound, along with some slaw. I also have some cornbread left over from last night.
