What's for breakfast?

Quick Chillaquilles:

Arrange some tortilla chips on a plate then drench with tomatillo salsa and green chile enchilada sauce. Mince up some onion and sprinkle half over the mess. Nuke in the microwave till the parts that are drenched soften and the bits stickin' out are still crispy.

Cover with grated cheese and the other half of the minced onion. Some cilantro on top. Nuke till it sizzles.

Top with an over-easy fried egg or two.

Don't burn yer mouth.
 
I haven't quite the belly despite some serious seasonal eating, but you are welcome to practice on me, ya ho-ho-ho. . .
 
I've got a tater-tot/sausage, egg and cheese casserole ready to go in the morning, plus some birch syrup cured shoulder bacon, and a there will be blueberry pancakes.
 
Birch syrup sounds interestin'. I hadn't thought about trees other than Maple.
 
  • Cajun sausage
  • Eggs
  • Sliced tomatoes
  • Half a jalopeño bagel and whipped cream cheese
  • Fresh ground Sumatra coffee
