What's cookin', good lookin'? Part II

I made split pea soup today. Added carrots, fresh spinach, garlic, onions low sodium beef stock. I forgot to buy the ham hocks to go with it. It turned out delicious though. I thought of adding potatoes but decided against it.
 
My wife took a LOT of frozen left over turkey, shredded, combined cream of chicken soup. sautéed onions, warmed. Topped with stove top stuffing in shallow baking dish 350 degrees for an hour. Fucking good
 
Västerbotten cheese crumble bites for starters with the drinks.
Plaice in a saffron chili sauce with potatoes dressed in butter and parsley.
Pastry puff bites filled with lemon curd and custard for dessert with coffee.

Yesterday I taught one of the kids to make black bean enchiladas.

Today we experimentented with stuffed salmon filled with garlic cream cheese, spinach and chives. Yum!
Will try with feta and dill too later.

Yesterday I made a huge pot of soup with low sodium beef stock. Lentils, carrots, broccoli, cabbage, spinach, onions, garlic, and corn were in the mix.

I confess to having to throw out the 10# chicken thawing out in fridge.. Issues at work complicated my ability to get that bird in the stove. It's not the first time, unfortunately. :)

His brother is coming for a visit for the first time ever in 15 years so surely that warrants a full on cake.

The crust is oaty, the cake part is mixed berries, yogurt and cream cheese. And the crust isn’t thick like that all the way, it just rises a little to the sides. I severely underestimated how much I would need for that size tin. The perils of not following recipes. 😅

Yes it is! There were fresh strawberries and chopped white chocolate inside the cake too as sort of a surprise layer.

Thanks! It turned out a lot better than I expected, all things considered. ☺️
 
Curry inspired butternut squash soup. I roasted the squash with turmeric, cumin, cardamom, cinnamon, nutmeg, chili flakes, salt and black pepper. I also had a head of garlic roasting in the hollow of one half of the squash. Then turned the squash into a soup with added sautéed onions, ginger, lots of that roasted garlic and more of the spices I used for the pre-roast rub. I think that was all.

Ideally I would have roasted chickpeas to top the soup but I didn’t have any at hand so I just chucked on some pecans. And cottage cheese because it had to be used up.

Very tasty. Happy now. ☺️

That reminds me of a dessert I had at a conference place with white chocolate powder snow on top.
The texture and taste was slightly different and interesting, so I investigated how this was done.
I learned that they make it with some pro kitchen machine called Pacojet. I even checked the price because it sounded pretty useful, but it turned out that I will not be getting one. 😱

Informal dinner meeting tonight, so I had a gyros salad with tzatziki and pita at a conference table.
 
Sibling weekend away w my sisters and my wife all weekend. Fun, board games, got high, drunk and laughed our asses off. Good to get away.

Made a huge pot of goulash Saturday night. Ukrainian goulash like my granny used to make, but put in tons of paprika for my wife who is Hungarian descent. Made homemade spaetzle.

Damned good if I do say so myself.

It was more like goulash without the paprika.

Was more like traditional beef stew I think but she called it goulash. Onions, potatoes and beef. She always made it with spaetzle, type noodles. She would make the dough and use a spoon and drizzle it into boiling water.

When I make it for my wife, I add in peppers as well as paprika for a more hungarian flavor.

I learned to make spätzle like that from one of my aunts, with a spoon or knife and a cutting board.

And I love potatoes in goulasch, especially how they take up the paprika flavour and add their own texture.
 
I made split pea soup while I was baking a whole chicken. I had to throw the chicken out as there was something wrong with it. But the soup turned out great and it doesn't take long to cook.

Mmmmmm. Love slit pea soup. Made some a few weeks ago with an old ham bone and ham hocks.

Sorry to hear abt the chicken tho…
