How long do you marinate the onion?

Usually not very long. 15 mins to an hour max, sometimes a little less too. It’s often the first thing I do when I start making a salad or something I’m going to use it for and rinse the lettuce etc only after that. And when I’m finished with everything else and it’s time to add the onions, that’s when I stop marinating.

The flavor of the onion starts to resemble green apple a little, it’s really nice. :)
 
I didn't cook tonight, but ordered in. I've had a hankering for a few days for chicken tikka masala and finally got to scratch that itch tonight. Sometimes the right meal at the right time just makes me sublimely happy. :)
 
I use this recipe to roast the butternut squash and then add chicken stock and some plain yogurt (to taste) to get it the right consistency. In the roasting mix I use one sweeter apple like a Macintosh or a Empire (both still fairly taart) and one tart apple (almost always a Granny Smith) The balsamic and the tartness o f the apple cut the sweetness, the maple and curry add a wildcard element and the yogurt give balance.

Thanks for the recipe, i love all kinds of roasted veggies. I'm not sure about adding balsamic to a soup, though.

Don't worry, it all works together: the curry, the balsamic and the maple...try it just as roasted squash first, its better in soup the next day...
 
So I broke down and made J a cake from scratch for his birthday which is coming up soon. I can't tell you when I last made one - much less one from scratch. It was definitely a hit with us both but probably because neither of us have had that much sugar in a couple of years!

I pulled out an old recipe that we haven't had for more than 10 years. It's been handed down a generation, or two maybe. When was the last time you saw a recipe calling for a 1/2 cup of Oleo?

Think ooey, gooey, dark chocolate cake with pecans mixed in the dark, fudgy, chocolate frosting. Maybe I'll post a pic later after I recover from my sugar coma.

Yesterday we had steamed new potatoes and broccoli, perch, mustard herring and onion butter sauce. Summer food. :)

Today it'll be chłodnik, ie. cold beet borscht with egg and potato salad made with yesterday's leftover potatoes. Also summer food. :)
 
Thai chicken larb on lettuce with broccoli. My stupid town had no lemon grass in it, so it wasn't the best larb ... but I loaded it up with garlic, ginger and chilli to try and combat the cold I have.
 
I made so much rhubarb jam and rhubarb juice. 😍

Mm, that sounds yummy! I need to make som rhubarb jam and rhubarb chutney.

We had croque madame made with prosciutto crudo and honey almond brie.

I had this today.

Roasted cauliflower wedge with pickled and smoked purple cauliflower florets, pickled yellow zucchini and mashed peas, toasted sunflower seeds and lemon thyme yogurt dressing. Absolutely heavenly and I’m inspired by the dish now. Wish it was cool enough to cook at home again, but when the temps indoors without cooking are around 30C/86F, I’m not willing to cook anything for the time being. I prefer being able to sleep over cooking.

Oh yes. It's the time where I prefer to have cold dishes like sushi or cold donburi.
 
The weather is pretty decent here, for a change, so I decided to blow the dust off my Tandoor oven and do a bit of outdoor cooking...

First up was some Tandoori chicken legs and a couple of small lamb joints encrusted with herbs...

After topping up the coals, I lowered my little grill attachment into the oven and done some fillet steaks which came out rather well...

Finally, a roasted pineapple with cinnamon and Lyle's golden syrup for desert. Super sweet!

The last bowl of homemade tomato basil soup with a several day old Chicago hard roll. 1/2 of an Ambrosia apple for dessert.

No frills and fast lunch. Yum!
