I'm making black bean soup tomorrow, which reminds me I need to go soak the beans. :)
 
Tonight I'm trying to up my risotto game. I used to make great risotto's but lately they've been a bit shit. Possibly it's the rice, but I found a recipe for the 'basic' version that swears it'll be brilliant. Fingers crossed. (I also should find some better rice at some point.)

What kind of rice do you use?

Trying for a bit more spring/summer feeling in the menu planning.
We had pita with canned tuna, cucumber salad and mint yoghurt with fresh mint from the garden the day before yesterday.
Yesterday we had pasta dressed with a cold sauce made with a bit of cream, lemon black pepper, tomato and avocado and topped with some coldsmoked salmon.
Today is a survive on your own day.

Arborio. Apparently there's some fancier types that has a better result. My risotto didn't cook enough, which (according to the recipe I'm following) means the temperature wasn't high enough. However, this recipe also uses a crapload of butter - I can modify that, obviously, as it's not great for my diet. But I might also look for a better recipe.

Your pita thing sounds yum. I went through a spate of making my own flatbread during our lockdown, with a very simple recipe that's basically self-raising flour and yoghurt, equal portions of each, turned into a dough, rest for a bit, and then roller out and fried in very little oil - almost dry really. Then just ate that with yummy stuff. I might resurrect that thing.
 
Stuffed peppers. I also make about twice as much filling as I need for the peppers and use the extra as a tortilla chip dip. It's good.

I used arborio before but then found a good brand of carnaroli. I think it is slightly better.
Perhaps try keeping the broth you add at a higher temperature?

Interesting with the yoghurt in the flatbread. Sounds a bit like piadine but with yoghurt instead of water.

I'll find the recipe. It's very simple. I found it quite pleasing to make with the yoghurt I made myself.

It’s nice, because it adds creamy sauciness with little effort. Soft boiled eggs work too. :)

And I’m stealing red cabbage and apple salad! So you use tart apples or sweet apples? Red cabbage and lingonberry salad is a thing here, but I’ve never added apple.

My lunch, and probably dinner as well considering how full I still am, was tlacoyo with beans and nopal and tacos de suadero and pescado. And a house margarita, which is made with hibiscus and is absolutely delicious.

I asked if they sell their super yum habanero sauce. They don’t, but they gave me a bunch of it for free. I love that place.

Tomorrow’s lunch or dinner will be something that I can eat with the habanero sauce. It’s just so good. :)

Granny Smith. Two apples for 200g of cabbage. Walnuts if you like or toasted hazelnuts. Dressed with 1tbsp olive oil, 1tsp dijon, 1 tsp apple cider vinegar, salt and pepper made like a mayonnaise.

I so wish we had a place like yours. We had a taco place that was heaven for a while. The guy whu ran it is a serial restaurateur though, so we’ll have to see what great stuff he turns up with next.

Keep it simple. Scrambled eggs with cheese are great for hot sauce. Add a small side salad and it's perfect.
 
I made lentil soup today. I need a bigger pot. Soup turned out well and have a lot of leftovers. I recently decreased red meat intake. A lot.
