What's cookin', good lookin'? Part II

Spaghetti with sea food on the menu for tonight, and some good Gewürztraminer wine to go with it. Slurp.
 
That sounds DELICIOUS.

It turned out pretty good even if I say so myself. It wasn't a particularly planned dish, just threw together things that I had in the fridge that needed to be used and shoved it in the oven to cook while I worked.
 
Broccoli cheese soup.

I just pulled the second batch of Devil Nuts from the oven. The first went into a package I mailed this morning.

Can't wait for them to cool so I can snack.

It's St Lucia's day today so I baked lussekatter. They turned out soft and lovely, but I ran out of patience trying to make them look uniform and pretty.

My parents swung by today to pick up my Christmas gift to them. Yesterday I baked a cake to give them as well. A lovely spiced chocolate cake with coffee icing. It's tasty but looks awful in pics, and because I have zero patience to make things pretty, well... I'm glad my parents have made peace with my lack of artistic skill and are just happy to eat my yummy baked goods. My mom loves those snowflake sprinkles and puts them on absolutely everything she bakes in winter, so I added them too. At least they didn't detract from the general ugliness of the cake. But it's a tasty cake and keeps ages! :D

I think your cake is charming. :) And as long as it tastes good, it’s a success.

Sake shioyaki (salted, grilled/broiled salmon) for dinner. This is the packed leftovers. Thinking about ochazuke (rice with tea) or onigiri (rice balls) with the flaked salmon and rice. It made a simple breakfast this morning.

sorry just saw this.

Devil nuts are chili-sugar coated pecans. (Caramelized)

4 cups pecans
1/2 cup melted butter
1 cup brown sugar
2 tablespoons chili powder

Coat pecans with melted butter in a large bowl
Add brown sugar and chili powder and stir to coat thoroughly
Spread evenly on a parchment-lined sheet pan
Bake 20 minutes in a 350 degree(F) oven. (Watch carefully as the sugar burns easily)
Let cool for 5 minutes then stir to break apart.

I usually add more chili powder but I've also made batches without.
I tried some chipotle salt this year which was different.
It's easy to vary the spices and I think it would work with various nuts but maybe will need to adjust the baking time.

Have fun!

Salmon bisque and roasted asparagus for dinner tonight. I’m still trying to decide if grilled cheese sandwiches are overkill or not.
 
I've decided to do a 365 days meal prepping challenge. Yes, that's right. I will cook for a whole year in advance. It will take two weeks of cooking according to my calculations.
 
Me too, and I love it.

One of the few joys left this year. I’m surprised that I haven’t lost the desire. I’m having difficulties with focusing on reading but fortunately cooking still relaxes me and gives me much pleasure. At least there is that.

The soup was decadent so I decided not to make grilled cheese. It was hearty enough on its own. :)

Tonight is kimchi miso nabe with mostly vegetables and tofu. I’m putting some fish cake in because I happen to have a few sheets.

I was thinking of a “no takeout” January. This puts me to shame.

Yeah, well, I actually wish I would know some influencers to team up with for documentation.
 
Tonight I'm preparing some grilled vegetables (Eggplants, Pepper and Zucchini) in oil. Put in some food containers and leave in the refrigerator ready for the week. The dinner will be spaghetti with a mix of sea food and white wine.
