What's cookin', good lookin'? Part II

 My risotto is rather plain in comparison to the one above.

I needed something that was diet friendly for me so it’s very simple. No broth, but it’s seasoned, and it has spinach in it. :)

:( Where’d all the cooks go?

I’m on a veggie kick. Last night was curry pumpkin soup with arugula salad. Tonight it’s homemade black bean burgers with mashed sweet potatoes and tomato cucumber chopped salad. :)

Beer. I'm beering right now. Well technically just drinking it. But soon I'll be brewing it. Not tonight. Tonight I'm just drinking. But in the coming days I will brew. I will probably drink beer while brewing beer. Circle of Life and all that. Tonight let's drink. It's been a fucking week.

Brewing sounds fun. I’m not able to drink right now, have one for me. (╹◡╹)

Wow! Both those suppers sound good. I made vegetable pho today. It's pretty good, but I wish I'd had a way to actually char the carrots. I think it could have been a bit better. But it was still better than what is served at most restaurants.

I’ve never made pho before. The restraints nearby aren’t very good but we do have a great place a little further away. Does it require anything special for the broth?

I'm starting my Christmas food prep today, tomorrow's the main celebration day here.

Gravlax, I'm making regular and beet gravlax.
Archipelago bread, which is a deep and dark rye malt bread that goes really well with gravlax (and roe, which is another Christmas staple for me).
Star-anise, orange and cinnamon caramel sauce to go with pears.

MF and I have finished cooking a nut roast for tomorrow. :)
Here's the finished product: :)

RAT!

I love me some mince pie. But, none for me this year because (for some unknown reason) neither the pies nor the filling are available anywhere around my hammock in paradise. I can't even special order it! (I tried - no luck.)

And, who stole all the fruitcakes? I swear, people are sooooo greedy.

Just pulled two pecan pies (Grandma D's recipe and using Mom's pie crust recipe) from the oven.

They're a little darker than I like but hey! each year is an adventure.

Happy Yule, ya'll!
