What's cookin', good lookin'? Part II

I had this strange dish in my head that I just haven't concocted yet because I'm not convinced it will work.
J loves French toast and I have and make it a few times a year for him. We stayed in a quaint B&B many years ago for our honeymoon that served an orange marmalade/cream cheese stuffed French toast. It was Devine!
Since butternut squash is a big favorite of his and it's sweet, I want to stuff a French toast with a honeyed squash mash.

Does this sound too weird?

I also like the idea of using pumpkin as a stuffing.

Gumbo

Does anyone have a good spicy gumbo recipe? I really want to try making it. Any ideas welcome
 
Today, a Big Mac, because I was on the road and needed quick. I never eat at McDonalds, but....had littl choice.
But yesterday, yesterday...cold beer and boiled crawfish. Done right.
Various dips and some boiled shrimp.
And I have another boil commi up this weekend.

Tonight will be corned beef with cabbage, potatoes and carrots.

Wish I was there!!!

We had that last Friday followed by Saturday's corned beef soup, Sunday's homemade corned beef hash topped with a fried egg, Monday's corned beef and Swiss on 24 grain bread.
I only have one slice left and wish I had another lb. or three.

It is a shame that it is quite so seasonal...
And expensive.
 
Lemon and tarragon chicken with green beans and spinach and possibly garlic bread, if my wrist feels okay enough to bake one.
 
:happy dance: Dark (really dark) chocolate and banana frozen yogurt. Way more easy to make than ice cream. It's super rich and not overly sweet. I'm beyond satisfied.
 
Trying to decide what I want to prepare to accompany the barbeque ribs I cooked late last night.

Too late to eat them at 11:30 pm so now they're kind of like leftovers. Right?

I may just slice up some tomatoes and use up that lonely cucumber before it goes bad. A little balsamic vinegar works wonders on both.
 
It was a fine pouring of trail mix that clinked and clanked into my bone white China bowl paired with sliced gala apples.

The tiny dried sweet and salty blueberries are definitely my favorite.
