What's cookin', good lookin'? Part II

I am a creature of habit. I made: Polish sausage, mashed potatoes, English peas, boiled squash, and fried green tomatoes. The tomatoes, especially, are really good. 😁
I still haven’t tried the boiled squash. And I only know fried green tomatoes from the movie. Maybe one day I’ll get to try both!

It’s been J’s birthday week, so it’s mostly been his picks recently.

Yesterday was pumpkin gnocchi with bacon and roasted cherry tomatoes. Today was tofu, rice and broccolini.
 
Ok, most of my meal was frozen stuff, but I was so proud of one of the things I made that I thought I'd share the whole meal here.

~Popcorn shrimp (frozen, just baked in the oven)
~Sweet potato fries (also frozen and just baked in the oven)
~Coleslaw (bagged, already shredded, but I did make the dressing for it)
~Hush puppies (from scratch, first time I've ever made them myself)

Most of the meal was just basic and quick, but the hush puppies were sooooo good, especially when you consider I was just taking a shot in the dark with the ratios and whatnot. :D
 
I just put a crustless buttermilk pie in the oven. (Crustless because I don't have a frozen pie crust in the house, and I'm not making one myself.) I can't wait to report back on this one.:D
 
Today, I did hamburger steak with gravy; rice (also with gravy); green beans; and a dish of fried veggies I needed to get rid of, consisting of potatoes, squash, a green tomato, and some onion.

The rice is brown, and I forgot it takes it a lot longer to get soft than white rice, so it's a little...crunchy, lol. The rest is pretty good, though, especially the veggies.
 
Tonight I made chicken/ green enchilada casserole..

Ingredients are:
* A lot of cooked cut up boneless chicken breasts or thighs (add taco seasoning)
* Sour cream
* Green Chile enchilada sauce
* Shredded Monterey & pepper Jack cheese
* Flour tortillas cut up 2x2 inch or so

Mix sour cream, enchilada sauce and cheese in a large bowl.

In a 9x13 or larger casserole dish,
Layer sauce mix, chicken and tortillas.

There's no wrong way..lol
Bake at 400 for 25 minutes or until bubbly..

Several years ago I had green chili and chicken lasagna in Cloudcroft, New Mexico.
Unforgettable. 😋
 
My response to high egg prices: eat more pancakes!
What am I not getting? Isn't there egg in pancake batter?

I made spinach crepes with cottage cheese and dill filling and salad yesterday. I also had one the traditional way, which is with lingonberries. Ahh, childhood. :heart:

I cheat, and use a mix. Just add water. Only in America, I guess.

Yeah, roughly the same that I paid for mine today. Mine were free range organic, 50 cents per egg for regular would be steep here.

(then again, I think milk products, meat, fish and eggs are all painfully cheap here, when you take into account how the animals live their short lives :( )

Every time you post, I end up googling things. I clearly need to up my Southern cooking knowledge game.

Hush puppies, biscuits and hashbrowns get all mixed up in my brain. Congrats on the hush puppy success!
 
A great food weekend here.

Yes, that is terribly cheesy heart shaped pasta and we had heart shaped pretzels with the drink before dinner. The drink of choice was Romeo and Juliet.

Saturday was schnitzel with potato salad.

Japanese curry! 1.5lb chicken simmered with three onions and stewed with curry sauce, potatoes and carrots. It will be even better as leftovers in a few days.
Since I made Japanese curry last week, I'm making American beef stew today! (I tend to make things on the weekend that yield leftovers, so I can skip cooking dinner one day a week.)

1.5lb diced steak, browned with two onions, garlic, celery and herbs de provence, It's simmering in beef stock + red wine until the meat is tender enough to add the potatoes and the carrots. I'll finish with a little flour mixed with water to make it smooth and rich ... .

It's been so cold here that I made split pea soup served with buttered sourdough bread. No pics, it went fast...sorry, not sorry.

We moved last year from FL to TN but I didn't give up my flip flops until November. Snow is still a novelty, LOL!

A few years back, my dear mother asked me what I wanted for my birthday dinner....

My reply... "Split pea soup and grilled cheese sandwiches!"

Cooking: I made roasted beets, feta, chickpeas and spinach.
 
Stonerrito: Taco meat with Cheez Whiz melted into it, leftover takeout fries, mini tomatoes, sour cream, and hot sauce.
