What's cookin', good lookin'? Part II

Made Pork Vinner Schnitzel breaded in Panko and Parmigiana, with Mashed Potatoes and a White Wine, Butter Sauce with Cinnamon Apples.
 
I don't cook much so I don't haunt this thread. However, I baked pork chops this weekend and I actually brined them first -- this little step gave me the juiciest chops I've ever tasted!!

I was so excited I had to tell somebody!!

Less exciting meal here.....but a meal for me!

I had a pepper omlette.:). Half a green pepper, half a red one, lots of Parsely, some thyme, a little Rosemary and some smoked salt. :)

I positively ADORE red pepper!

In salads, in with cooked veggies, minced with garlic as a crust for pork loin, and on and on...
And now, I shall try it as an omelette :)
 
I like yellow and orange ones best.

But, I don't know if you remember I have a problem with yellow and red together :eek:. An exception is peporanata. If you have not had this, I think you should make it. I think you would like it. :rose:

And peperonata goes on the list :)

Well, not that I will be proper :D but Victorian sponge, scones, sandwiches and the whole nine yards.. My chefy friend hasn't done up a whole tea for me in a while. Excited! :) :heart:

Here's my tea, such a treat! Victoria sponge, scones with clotted cream and raspberry preserves, shortbread cookies, and tomato and cheese, cucumber and watercress, and egg salad sandwiches. Nom nom nom!

Not cooking tonight, but need tastey vegetarian recipes for a friend who's considering cutting back on her meat intake.

I got a good baked zucchini receive that makes a great side dish, but I don't know how to make entrées

You might also try a simple main of roasted summer veggies. I might do baby squashes of pattypan/scallop variety, baby sunburst, baby zucchini, a few scallions, chunks of eggplant, whole cherry tomatoes, maybe even a few fingerling or new potatoes? You would have to cut them up though, so everything cooks in the same length of time. I like roasted celery as well, whatever you can find that looks good. Even corn on the cob, cut into chunks. Oil it all, toss with salt and pepper and whatever herb or spice you favour and wrap in foil or place in a covered dish to cook so it stays nice and moist. Serve with bread and salad of some sort. I love this dish.

You could also do rice stuffed bell peppers, baked winter squash, stuffed eggplant, grilled veggie skewers... or just ask your friend if there is anything they like so that you can learn to cook something new.

So Sunday dinner is Chicken Fried Steak and mashed Potatoes and Gravy, with Creamed Corn
 
We just got back today and I'm kind of exhausted, sore and I may actually be ill. As we drove home from the airport we decided we wanted our kind of comfort food. White rice, miso soup and salad. I'm still too icky to really cook, so it's a team effort tonight and Mister is doing a lot of the work under my direction. :)
 
I've been thinking about broccoli stalks since the question came up. I purchased some broccoli slaw (it's just shredded, stalks nothing added) and made a salad with it. I used raspberry vinaigrette, dried cranberries and a sprinkle of poppy seeds to top it. :) Low calorie and yummy.
