It's usually just the wall behind your counter. People tend to decorate it to accent their kitchen. Usually with tile or some sort of wall board. Helps keep down issues with splashed foods and liquids from getting on the wall.

Mine is a light brown/tan. But that's because it's the same color as the rest of the walls. Where I used to live it was a multi-color slate and green glass tile.
