I seem to somehow always get ones that start to turn green. Read somewhere you shouldn't eat old, soft, green potatoes. And my apartment is never warm. Heck, I hold out turning on the heat until it gets below freezing... for the pipes. lol

You can buy them this weekend and boil them, mash them, and refrigerate them. When you need them, mix in butter, cream/milk (I use evaporated milk) and warm them in a slow cooker.

ETA: I often freeze them, too.
