Okay...I'm a little lost. I've never used a recipe to make chili. Don't you just put in whatever you feel like putting in, while getting rid of whatever veggies need to be used? (Onion, sweet peppers, burn-your-butt peppers).
If you were to say that about gumbo, do you think Cajun country would say that sounds right?

Chili-evangelists have strong opinions. I tried to fuck around and put ground turkey, corn, and black beans into my chili (as opposed to simply ground beef and kidney beans).

The old heads at work made me walk of shame out the door.
 
I make my own chili powder with dehydrated peppers from my garden. And no, not every dish.. but I do make Peach Habanero ice cream and White Chocolate Habanero cookies.
Some recommends..........Mighty Spice Express Cookbook/Mighty Spice Cookbook, both by J. Gregory and because tis the season...❄️.........."Healing Spices" by B. Aggarwal Phd, tons of good stuff in this book for health........all on Amazon 🚚

You know once you put beans in Chilli, technically it's not Chilli anymore.

agreed...all you need for perfect chili is a texas two step chili kit, 2lbs of 70/30 ground beef, a jar of mrs renfros habanero salsa, 8 oz of beef bone broth, shredded sharp cheddar cheese and original fritos...dont bother with the masa packet, its just a thickener...
