If you want to hear good signers doing it, then the original's by John Denver and Placido Domingo. I've never been a fan of Placido Domingo's voice so I've been waiting for years for someone to cover it. After hearing Vella and daughter sing Santiago (which I still have saved on my comp), I always thought they'd do it well.
