Given that heraldic language conventions are part of the soup, it could also be implying it's the color of a stylized eagle and not the actual species,
Or both.* It's easy to slip into anthropomorphising and think of it as having a specific one of those two in mind and trying to express that answer, but in reality with a LLM there's no "in mind"; all it knows here is that "golden" followed by "eagle" seem like good words.
