BTW, I was working on my next batch of beer this evening. I transferred it from one fermentation bucket to another because, as the alcohol level increases, the yeast begins to die, and dead yeast does not taste good. So, now it is in a fresh bucket.
I don't think it will reach my target of 8% ABV. I think it has stalled at around 7%. Still, it looks, smells, and tastes good already, and it will most likely only get better.
