Under each post, there are three buttons.

The first allows you to quote that post. The second is the multi-quote button, which is actually a toggle (on or off). The third button is a quick reply, which just moves your cursor down to the text box at the bottom of the thread.

If you click the multi-quote buttons under several posts and then hit the quote button, you'll be able to quote several messages in one reply. I think there's a limit to the number of posts you can multi-quote, but I'm not sure what it is - five maybe?
