The first time I tasted one, it was the old-fashioned type with stringy chewy flesh and I hated it. Then I went to a farm stand here that labels the different types and found some that are the same consistency as a ripe peach. Incredible. If a taste and texture can be sexy, a perfectly ripe mango is it.
You can freeze the fresh cubes and use them fresh from the freezer in milkshakes...Arggh! It'll be weeks before the local ones are ripe. I hate waiting.
