The first time I tasted one, it was the old-fashioned type with stringy chewy flesh and I hated it. Then I went to a farm stand here that labels the different types and found some that are the same consistency as a ripe peach. Incredible. If a taste and texture can be sexy, a perfectly ripe mango is it.

You can freeze the fresh cubes and use them fresh from the freezer in milkshakes...Arggh! It'll be weeks before the local ones are ripe. I hate waiting.

I bet you could mix it into a batter and fry it.

In Texas, we used to eat breakfast at a place that specialized in deep-fried toast. It's like French toast for people who want lots more fat and sugar. It's dipped in thick sugary batter, like donut batter, and fried in tons of Yellow Diner-Style Fat, and drizzled with cinnamon and drowned in syrup. What if you made the bread for the fried toast, and added bits of mango to the dough?

It's exactly like that, except that everyone is clothed and no one is having that much fun.
 
mango chutney or maybe salsa

Mango Chutney

flesh of 1 mango, chopped
flesh of 1 lime, chopped
½ inch wide, 1 inch long piece of
ginger, finely chopped
1 tbsp. turbinado sugar
½ tsp (or more) kosher salt
freshly ground pepper

Puree all. Add

1 small poblano pepper, cut up

whirl to scatter chunks through
mixture.

Good to eat with samosas or
marinate fish...

Thank you. That sounds delicious. Can I use something other than poblanos? They scare me.
