There's also the method where it's very hot at first, and then you turn the oven down to warm. There are so many ways to cook rib roast to have it come out well. Lately, my favorite has been sous vide and then in the oven or on the grill for the crust.
That's actually what I'll be doing. 500 F for 5 minutes per pound and then two hours in a turned off oven left unopened. I've found it to come out perfectly every time. Granted I've only done it with the smaller roasts - 3 to 4 pounds.
My kitchenaid takes up enough room. I don't think I have enough room for a sous vide.
