I feel the need to completely withdraw from everything and do nothing but sleep for a week.
 
It's so hard to give a damn about holidays when K's not here to share them with me.

And it's amazing how much more seductive the vicodin in my medicine cabinet is when he's not home.
 
I now have a vibrating toothbrush.

Yet another reason to not leave the house, or insidious little torture device?

Does anyone know of a really good low sugar/no sugar/diabetic/healthier recipe for cookies or brownies? Preferably one that involves chocolate of some sort? and doesn't taste like it's diet?

Sugar-free almond spice cookies

Prep Time: 10 minutes
Cook Time: 10 minutes
Ingredients:
2 cups almond meal (with skins works fine)
1½ Tablespoons apple pie spice, or 1 teaspoon cinnamon, ½ teaspoon nutmeg, and a pinch of cloves
½ teaspoon salt
½ cup sugar equivalent in artificial sweetener (zero carb preferred, such as liquid sweetener) <I use either fructose or agava>
1 large egg
½ teaspoon vanilla
1 packet artificial sweetener (to sprinkle on top)
Sliced almonds (optional)
Preparation:
Heat oven to 325 F.
Combine all dry ingredients -- a whisk works well. Add the wet ingredients, and combine well, until mixture has formed a large ball.

Form balls about one inch in size. Flatten with hands or a spoon to about 1/4 inch thickness. Sprinkle powdered sweetener on the tops. Place on baking sheet covered with parchment or silcon mat. (Alternatively, grease the baking sheet.) Top with sliced almonds, if desired.

Bake for 10 to 12 minutes, or until cookies are slightly brown on bottom.

Nutritional Information: Each serving has a little over half a gram effective carbohydrate plus 1 gram fiber, 2 grams protein, and 50 calories.

I love these cookies, but the almond meal is kind of expencive. You get about 12-18 cookies per batch and about 2 batches per bag of almond meal. Or you can make your own almond meal if you have a food processor.

ETA: I haven't found a recipe yet that was diabetic friendly, had chocolate, and tasted good. But there is a cake mix out there from 50/fifty brand that is pretty good. (They're called 50/fifty because half of their profits go to diabetic research funding) You can usually find it in the diatetic isle of any grocery store.

You're absolutely welcome. And I understand. But we have some elements of our respective stories in common, and if you ever feel like you just want a sounding board...well, I'm here. And if not, I certainly get that, too. It ain't easy here either, for the record.

Okay, if you call me at 3:05 there is no way I am making it to work at 4:00 which is an hour earlier than what I am scheduled. I live 45 mins away, m'kay.
 
So, L just came in and informed me we have a job tomorrow, putting together and installing four, high end closet organizer systems for a past client of ours.

In a painful flashback, the memory I had repressed, of the day we put together two, Jysk armoires for a client, came flooding back to me.



By 5pm tomorrow, expect that I will be divorced or widowed.
