The Chefs Kitchen

I only own half a dozen cookbooks, but they're all pretty well used. The most recent would have either been Ottolenghi's Simple, or a specifically seafood book by a local chef, given to me because I've moved to a seaside town that has the most amazing fresh fish ... although I have to admit it's probably my least used cookbook.

For those who 'can't cook', can I recommend the Nat's What I Reckon Youtube channel. He's an adorable young Australian who started making videos during lockdown, and is determined to stop people using jar sauce and other 'convenience' foods ... warning, it's a bit sweary. OK, a lot sweary, but the recipes are generally pretty good, and he's very encouraging. (Also a huge supporter of mental health issues, and an all-round good guy.)
 
You’ve got to bear in mind that I’ve been a chef since I was 18 and I’m 50 now so that’s a long time to acquire books.
I’m now under instructions of 1 in1 out lol but I managed to sneak a new one in this week unnoticed 😂

Nice to meet you too Anastasia, glad you popped by to say hi & contribute, I’ll be honest with you I have lots of cookbooks and I also rarely use them, pretty bad huh. I have them more for inspiration than for the actual recipes.

That goose looks amazing though, I hope it tasted good?

It was delicious. So much easier to cook, I find, than a turkey. It bastes itself and never dries out, there is so much fat in it!!

I’m in Germany where goose is more popular than turkey in any case.

Impressive book shelf! I only heard that Gary Rhodes had died years after he actually did. I used to quite like what he cooked.

I have a few Jamie Oliver books along with a well thumbed through Cookery Course from Delia Smith that my mum bought me when I got married, donkeys years ago.

I thought I’d share my food prep for the week. We’re going to be eating power bowls for lunch or dinner. One will be more of an Asian style and the other Mediterranean...chicken for my daughter and chickpeas for me. I’ll take pictures of the finished products too.

Wow someone is going super healthy this week, that’s a pretty fresh looking amount of prep to do there, are you going on a health kick?
 
Oh if only I could be so organised lol

I don’t think you can fully feed a family during a pandemic without being somewhat organized. I can’t just go to a store mid-day anymore.

I have been trying to add 1-2 totally new to me dishes per week. And I’ve been exploring a market here that excels at getting specialty produce which makes it fun to figure out how to use them. I don’t suffer from an inability to get ingredients here, and I’m incredibly fortunate.

I’m doing the 75 Hard Challenge. I’ll need to modify some things with the upcoming surgery (still not scheduled) but I have crazy high inflammation right now and I have to shut it down. So no gluten, dairy, sugar, red meat. I need to eat primarily vegetarian/vegan. If I prep the food then I’m not tempted to cheat. So I set my fridge up like a salad bar so I can mix and match and make something quick and easy and not have to think about it too much.

Wow that’s quite a brutal challenge and I can see why it’s called the Hard Challenge, good luck with it (particularly the 1 workout being outside - how are you going to manage that?)

If it’s going to help your overall health then I guess that’s the only motivation that you need, although I’m sure you’ve got plenty of support. If you need any inspiration on what to do with that mountain of veggies then let me know, I’m sure I’ve got a book somewhere......... just don’t come to me on Friday and say that all you’ve got left in the fridge is a mountain of chickpeas and half an avocado :p

Adding 1 or 2 new to you dishes a week is a great idea, something I guess all of us could learn from.
With the speciality ingredients at the market it’s often really good if the vendors themselves have an idea of either why they stocked the item in the first place, or some knowledge on what you can do with said ingredient, these are the good vendors who know their stuff and have a passion for food

I’ve personally never been to the River Cafe, the books were purchased as inspiration (particularly the green one) when I worked a job just looking at vegetables

Well lol, I’ll have to modify a little. I’ll snow shoe or cross country ski when possible...if it’s too cold out I’ll go to the gym or go ice skating.
I’ll post pics of some of my meals. Most are going to be boring protein shakes 🙄

Well, this sounds like a fun thread! Good idea. And as I'm going back to a healthy eating diet after the debauchery of the holidays, I look forward to maybe getting new ideas.

I have maybe 10-15 cookbooks, my favorites of which are the good old standard basic Better Homes and Gardens in the red-checkered binder, and a cookbook compiled by the ladies in my Grandmama's little Southern town back in the 20's. Some of my favorite recipes are in that.

Nowadays I use Pinterest for any new recipes, mostly. It's so easy to search for anything you want and to organize and find them later or delete the ones that don't work out.
I am so sorry I never replied to you, I have no idea how I missed this.
Those family recipe books or the good old standards are some of the best books, so if you have 10-12 like that rather than the 80-90 that I have then yours are far more valuable and you should cherish them

Ottolenghis books are all good, and you know his website is full of additional recipes too the food he cooks is so simple, vibrant and fresh.
Amazing that you have the fish so close and so fresh too, you should try the recipes in the book and then maybe go and talk to that chef more........

Great that you shared the YouTube channel, thank you, I like the principle and it is sure to help one of the “cant cook/won’t cook” people who may have posted or be reading this thread. Thank you for sharing

umm my favourite Kitchen gadget is my KitchenAid, that is such a handy gadget in the kitchen and i can do so many things at the same time and dont have to worry about not having enough time....as this gadget works pretty much alone

I'm with both of you! I've had my KA for many years now. It's pastel pink which probably tells you how old it is! I love it for making pizza dough. I would so love a wood-fired pizza oven.

Do you realize in the states, people let nothing stop them from having an authentic barbecue? They grill especially in the snow or whenever the mood arises. Imagine waking up to steak cooked on the grill after it had been marinating for a whole day. Your neighbors waking up thinking, I wish...

I have a very small kitchen and so gadgets are rare. I have a cuisinart food processor that gets used fairly often. I also have a vitamix that I almost never use because it’s so huge.
So maybe my favorites are my Wüsthof knives since I use them many times a day?

Whenever I move to a bigger house, I plan in getting a kitchen aid mixer to keep on the counter to virtue signal 😉

Definitely my Braun 'hand blender' - makes it sound like a stick blender, which it is, but also a heap more, and takes up far less bench space than the traditional blender. Probably not so great for the big jobs, but I live alone (and also with a very small kitchen) - perfect for just about everything I need it for. A recent guest said if she gets married again, I have to get her one for a wedding present.
