Non-binary means someone who rejects the notion that they need to choose to be either male or female. What they do choose is not specified by the term, and could be anything other than those two extremes.

Sirhugs, I think what you’re wanting is an androgynous or possibly an intersex person (note the protag could be non-binary but I assume you’re wanting someone whose gender or sex would not be immediately evident). There are some non-binary people who do pursue androgyny but a lot are comfortable with their bodies as is in fact I have a few non-binary friends who have kept presenting feminine or masculine and even prefer presenting as they did before coming out.
If you do want them non-binary in addition to being androgynous you wouldn’t assign them a gender cause they’re non-binary.
Now I know the term isn’t liked and it’s not realistic but for the sake of erotic fiction you could have a protag who is full on hermaphroditic (again, maybe make it a low sci-fi setting) with a working cock and vagina.
Back to your original idea:
I’d say the hiring parent runs into them at the store or in town and is immediately taken with them but being attracted to someone so androgynous is confusing to them as normally they’re attracted to people who are overtly masculine or feminine: not someone who fits into neither. Our protag is fit and trim but not overly muscular, they wear clothes that could be seen as more masculine but the way they wear them is closer to a female fashion model. Their voice is even in a range that a bit high for a man but a bit low for a woman.
Our parent strikes up a conversation with them and when they hear protag babysits as a side job, parent immediately comes up with an excuse to hire them.
Kids love them and being kids they called them both mr. And Ms. And protag didn’t mind either . Parent realizes they are hopelessly attracted to them and set about seducing them
Standard set up: the kids go to grandparents for the weekend and babysitter comes over, parent apologizes and invites babysitter out to the pool to take a dip with them, hoping to see them in trunks or a bikini or one piece.
Protag however only pulls out a bikini bottom and reveals they know what’s up…and they’re willing to let parent get with them if parent will play with them for a bit. They guide parent to the pool’s shallow end or hot tub and blindfolds them.
They then spend time teasing them saying things like: “would my fingers feel better inside of you if I was a woman? Would you not want to suck on my nipples if I was a guy? Would you not want to fuck my ass if I was a girl?” Etc, to prove the point that parent is smitten with them and protag doesn’t prescribe to either gender: they’re hot as fuck, regardless of what fiddly bits they have.
