The weather was nice today and like most weekends I broke out the grill to do some master grilling! lol;)

My butcher cut me a few 1 1/2" butterfly pork chops (The other white meat including my big cock) :rolleyes:

Menu> Pork Chops, Homemade buttermilk biscuits, egg mustard potato salad and a Grape cabernet from Kroger called Big K!

Grilling hint from the crack* Never use a gas grill ONLY charcoal to get that real grilling flavor! NEVER use charcoal lighter fluid to start your coals always use a charcoal starter chimney and let it burn for 20 min before adding the coals to your grill :)

hot coals cooked fast, direct heat or slow cooked indirect?

This is what I do :rolleyes:

I have a special smoker grill that is about 4 feet in length I ONLY use hardwood charcoal. I put the charcoal on one side of the grill not the whole bottom and let the grill preheat for 15 minutes after i dump the coals in the grill.

I sear the outside of the meat immediately over high direct heat for 4 minutes on each side, after that I move the meat to the other side of the grill with indirect heat and close to top and continue to cook that way.

I did a boston butt this weekend, used pecan wood, that's the best. I also like oak and then hickory. I use big chunks, not chips, and cook it slow. I wish I had a grill like yours. Mine's a Weber kettle cooker.

Yeah, You may think its weird but i found a great rub for pork that is suppose to be used on gourmet burgers but it taste so good on pork I use it!

I got it from walmart its called Weber grill creations gourmet burger seasoning, does not take much.

Oh yeah perfect! I like pecan wood also the flavor is more mellow and not overpowering. You have to be easy on the hickory.

I cooked a 8 pound BB last weekend.

One day try to get a grill like this, charbroil makes one just like it but this one is made by new braunfels in texas. Heavy steel last forever.
