Bleh. My depth perception goes when I get drunk (or tired) and I have a habit of "bonking" my head against tables or the backs of booths when I laugh really hard. Yes, I know. it's goofy and embarrassing and just like Bluesboy to bring up stuff that I'd rather keep private. *harrumphs*

Here's another for Trish:

This one I grabbed from Recipezaar, if I recall correctly. I don't like zucchini, but hubby loves it so I got it for him. I also did it once with a mix of zucchini and yellow squash, which he liked, too.

Broiled Zucchini with Herbs

2 teaspoons olive oil
2 cloves garlic, minced or pressed
2 tablespoons fresh lemon juice
1/4 cup finely chopped fresh parsley
1/2 cup finely chopped scallions
1 teaspoon minced fresh mint leaves
1/2 teaspoon dried thyme
1 dash salt
1/4 teaspoon ground black pepper
5 cups sliced zucchini (about 1 1/2 pounds)
1 tomato, cut into wedges

Preheat the broiler. In a large bowl, whisk together the olive oil, garlic, lemon juice, parsley, scallions, mint, thyme, salt, and pepper. Toss the zucchini and tomatoes with this mixture until evenly coated.

Place the vegetables on a baking sheet and broil for 8 to 10 minutes, until the zucchini is just tender.
 
I've made almost exactly that same receipe. Minus the mint and plus an onion, wrapped in foil on the barbeque. yummmyyyy

Are you having a fun day off, Girly-girl? I love the thought of doing those on the grill! (especially since hubby eats them. hubby does the grilling...seems totally fair to me!)


For Trish:

Take a (16oz) bag of frozen green beans. Put 'em in a nuke-safe bowl some water and nuke 'til they're where you like 'em. Mix together in another bowl: dijon mustard, garlic, oregano, a dollop of olive oil, salt, pepper, and a splash of your favorite vinegar. Drain the green beans, then toss with the dressing until coated. Yum!

(btw, since you have kids I'm going for stuff that's fast to make...except the tart, just cuz it's good).

You're welcome, Trish! I've exhausted what's on my hard drive here at work, so I'm scouting over at a few of my favorite recipe sites. I LOVE the sound of this for the summer:

Balsamic Cucumber Salad

2 medium cucumbers
4 tablespoons (fat-free) mayonnaise
1 tablespoon balsamic vinegar (or to taste)
2 tablespoons sugar (or sugar substitute)
1 teaspoon lemon juice
1 clove garlic, minced
black pepper

1. Combine all ingredients in a bowl (leaving out cucumber).
2. Slice cucumber lenth wise into quarters, then into 1/2 inch slices.
3. (Cucumber can be cut any way, but I like bite size crunchy pieces.) Mix cucumber into dressing mixture.
4. You can marinate if you wish, but tastes great right away!

Oh, and don't forget roasted asparagus, Trish. Just toss asparagus with equal amounts of olive oil and balsamic vinegar. Lay flat in a roasting pan and sprinkle with salt and pepper. Roast at 400° for about 10 min.
