I’ve had a few users favorite stories of mine, but the count of favorites doesn’t seem to update. Examples include Tall Sophie Ch 08 has 9 favorites in my feed but only counts 8, similarly Tall Sophie Ch 01 has 27 favorites in the count, but has since had 2 more in my feed, so should be 29.

Just a quick note: Removal of favorites isn't announced to you in your feed. As so many people are still using the favorites function as a bookmarking feature, it's quite common for people to favorite a story, and then remove the "bookmark" once they read it.
So it's not implausible that the number of increased favorites you're expecting have been removed while you weren't looking by users.
It's entirely possible that favorite numbers on stories aren't immediately updating as well. I don't believe the main followers number is on a real time update schedule any longer, so I would guess that the story favorites aren't either. It may very well catch up with your expectations the next time the numbers update.
Or, it could actually be a bug. Just throwing some possibilities out there that you may be able to confirm or eliminate through continued observation.
