Because you can watch an episode after not watching one for years and even though they have all new characters and different actors playing old characters that you don't recognize and they've gone off on weird storylines you still get all sucked in.

That's because they recycle the same writers, producers, and storylines year after year. Only the names change.

Ah don't forget the clothes and the hair. They change. I used to watch them with the sound turned off when I got stoned. It would amuse me while I did my exercises.
