God fucking dammit. I wanted to discuss the merits of alder v cherry. Fuck it. I am going to anyway. If you're smoking poultry or fish, cherry is the wood you want to use. Alder is good for pork. Bigger meats with bigger flavors can carry big smoke flavors like hickory and mesquite. If you smoke with an electric smoker, you're cheating. An offset smoker is the way to go, with lump wood. Best to do it at home. Google "meat smoker" and you can find all kinds of cheap and handy devices for sale, requiring no more investment than the machine itself and a bag of wood-chips. Unless you want your dick sucked, in which case, google "gay bars" plus the name of your town, and you'll get results cheaper still, and less damaging to your cholesterol level.

I like an apple and mesquite mix for pork, especially ribs. I never smoke poultry, mostly 'coz I've never found it to be worth the effort and time it takes.

But yah, I'm with you on the offset smokers that use a real fire.
