Either the US believes in the "One China" policy or it doesn't.

If it does, then Taiwan is a part of China, and every sovereign country can have diplomatic relations with either the People's Republic of China (i.e. China) or with the Republic of China (i.e. Taiwan), but not with both. The US officially cut its diplomatic ties with Taiwan in 1979, after 7 years of a rapprochement between the US and China. Only a few countries today have official diplomatic relations with Taiwan, such as Belize, Guatemala, Haiti, Marshall Islands, Nauru, Palau, Paraguay, Saint Kitts and Nevis, Saint Lucia, Saint Vincent and the Grenadines, São Tomé and Príncipe, and the Vatican City, which means not having diplomatic relations with China.

If the US doesn't believe in the "One China" policy and actually supports Taiwan independence, then we're heading into a war with China, and all the disastrous chaos and danger that this would bring.

You cherry picked that quote. The full quote was
"We do not support Taiwan independence, We remain opposed to any unilateral changes to the status quo by either side. We continue to expect the peaceful resolution of cross strait differences. We remain committed to continuing our responsibilities under the Taiwan Relations Act including making sure Taiwan has the ability to defend itself."

The USA has NEVER supported "independence for Taiwan". They have promoted, since 1979, a status quo where China and Taiwan agree to disagree over their status, the USA will NOT institute diplomatic relations with Taiwan, and both China and Taiwan can sell goods in America so that everyone benefits.

It's not ideal but it prevents war.

I‘ve eaten garden vegetables with a better grasp of international diplomacy than you.

So why did Nancy Pelosi visit Taiwan, and Kevin McCarthy threaten to do the same? Imagine Chinese government officials doing the same with Hawaii.

Pelosi's visit to Taiwan saw the Chinese military increase their presence in the area, to put it mildly.
