Is grassing like cockney where they take the phrase 'a snake in the grass' and then just cut it down to grassing?
No..from what I can tell it comes from the cockney 'grasshopper' which is rhyming slang for a copper, or policemen. And so a grass or a grasser was someone who told the cops.

Now used as 'a grass' or if someone 'grasses you up' .

Basically means telling on you
