Seafood soup

I'm cooking seafood soup-yum. And tomorrow I am making hot crab dip which is even yummier.

Seafood Soup

¼ cup butter or margarine
1 cup finely chopped onion
½ cup finely chopped celery
1 shallot (optional)
¼ cup flour
¾ tsp paprika
4 cups milk
2 cups half and half
1 tsp salt
1 tsp grated lemon peel
1 tsp Worcestershire sauce
½ tsp pepper
Dash hot sauce
1 pound of crab meat or other seafood (shrimp, bay scallops, etc) cooked
¼ cup dry sherry
2 tsp chopped fresh parsley (optional)



Melt butter over medium heat in large pot or dutch oven

Add onions, celery and shallot and cook until softened, about 5 minutes, stirring frequently.

Add flour and paprika and cook 1 minute. Gradually add milk and half and half and stir until smooth.

Add salt, lemon peel, and Worcestershire sauce. Add pepper and hot sauce.

Bring to a simmer. Reduce heat to low and cover. Simmer 20 minutes.

Stir in seafood (well drained) and sherry.

Cover and simmer 20 more minutes to blend flavors.

Do not boil, just simmer!

Sprinkle with parsley.

Serves 8.


You can also add diced potato or other vegetables for variety.
 
Do you suppose it would lose any of the flavor if I substituted Spam for the seafood?

It would definitely gain flavor. You can make ANYTHING with Spam!!!! :nana: :nana: :nana:

just be sure of the chemicals involved.

No, I think it would have an entirely different flavor... perhaps even MORE flavor...

maybe you could help out here and make the batches of soup bigger... seems like there are some hungry folks about.

No, just a great idea turned into the Universal Product. If it were not for Spam everyone on the continent would be speaking german.

I prefer seafood soup with sea food to sea food soup with spam.
