I just roasted cherry tomatoes that were going to go south. Roasted 5 cloves of garlic, too. What should I make?

Chop em, toss in a pan with angel hair pasta, evoo, a dash of fruity white wine, some basil. finish with thinly sliced parm.

Low sodium chicken stock if you don't like wine. And for God's sake, use fresh basil, not the dry stuff!!!
 
Johnny, ftw. Except I don't have basil. I have thyme in the garden, though. I have some squash, too. That would rock in pasta.

But I was thinking soup. Simmered with onions... pureed, add a little cream at the finish. But, ugh. Seeds. Roasted the tomatoes whole. And I only have enough to make one bowl.

Wish I had white fish.

Heap onto sour-dough bread, add a generous drizzle of olive oil and lots of freshly ground black pepper.

I only have rye bread. Doesn't that just seem so wrong with roasted tomatoes? I have tortillas, too, but again... wrong.

I was thinking of making focaccia, but it would barely be done by dinner.

Damn. I want crusty bread.

When I was a wee lad, my grandfather used to eat black bread with cream cheese on it. I thought it the most horrid thing ever.... black bread???

But now I can't get enough of it.


I suppose that little story has nothing to do with your nightshades though.

I envy your cooking skills. I would add feta and make bruschetta (sp?), but do you you know how to keep the tomatoes from making the bread soggy? Is there a trick?
 
If you had also roasted peppers, I'd be screaming PASSATA at you.

Toast the top of the bread. That helps.
But seriously, it never sits long enough here to go soggy.... the boys hang around the kitchen and eat it as fast as I make it :rolleyes:

You can still make the soup, just run it through a strainer after you puree it. This is how I make tomato soup all the time (by roasting tomatoes) and it is the best.
