If, say, I was the person who created/pays for a "friends & family" mobile phone plan and my spouse had a mobile phone on that plan (or for that matter anyone else, say, my children or grandparents, etc) and I wanted to see records of any text chats on a phone number on that plan, deleted or not, would that be possible? And if it's possible, would it take time to get those?

"The account owner can only view the message details for the last three months. They will only be able to view the date, time, and numbers of the text messages."

What I'm trying to figure out if there's a way for a cheating couple to give away the hotel where they planned to meet so a PI could go there, slip the clerk $100, choose a room to give them when they arrive, and allow the PI inside to set up audio/video recording devices/cameras.

It shouldn't be too hard...

Put him within earshot and have them start the phone conversation "Hello is that the Bellevue Hotel."
Have them book online and get him access to the email confirmation or web-browswer history.
Give him access to the phone (borrowing it to make a phone call) and work out the hotel from the number.
Telephoto lense on the phone screen.
Have it be their second liason and he tailed them on the first.

Hmmm... you should be able to track a phone you are paying for in real time. There are apps out there that will let you do that. Of course, if the user of the phone is aware they could turn the location(gps) off.

You should also be able to get the chat logs from the provider of the phone service, ie. TMobile, AT&T, etc.

In addition to the above:

Somewhat longer term, if the couple regularly use the same motel, it might show on credit card bills.

Higher-tech, in addition to that smart phone tracking, GPS trackers are no longer James Bond and can be stuck with a magnet on a car's underside, allowing your PI to follow. No, it wouldn't achieve your aim the one time, but it would allow the PI to predict for the next time.

We all know of phone and email accounts being hacked illegally, of course. The spouse or the PI could either do that themselves (if they have the ability) or else pay somebody to do it for them. Same-same, it's possible, given physical access to the cheater's phone or computer, to install software to allow real-time back-door access to what's being set up.

Don't know about the phone logistics, but that seems like a small amount to pay to the clerk. It will put his job on the line and he might be criminally prosecuted if it comes out. Any evidence gathered will probably also not admissible in a court of law (like say during divorce proceedings). Just something to keep in mind.

If he clones the phone, he'll have access to the chats, the voice mail, and the call log. It works like the real phone, I can't remember, but he may be able to listen to phone calls in progress. Of course, it's completely illegal.

These are for parents to use and are not the same as PI cloning phones (though the same tech). There is implied legality to a parent monitoring their child, which doesn't exist in a husband-wife situation. And certainly isn't legal for a third party, including the police, absent a court order or warrant. Not that a PI wouldn't use the tech. They do. It certainly can be used without fear, in a story.
