We have, I'm sure, lot's of stories that feature characters described as nymphomaniacs.
However, I'm equally sure most of them don't deal with it realistically.
That is, a nymphomaniac isn't just a "slut" who enjoys sex more than most people. A nymphomaniac, or hypersexual as is, IIRC, the current uni-sex term, is someone who is mwntally, as much an addict as any junkie; horribly depressed and miserable when not having sex, but largely unable to enjoy it either, requiring huge amounts of sex in order to feel anything even remotely resembling pleasure or release.
I can see such a story written two ways:
One as erotic horror, as a hypersexual woman(man) debases and debauches herself(hiself) with meaningless sex act after meaningless sex act but feels nothing.
The other is as romance, when a man(woman) falls in love with a hypersexual woman(man) and, through his(her) love, helps her(him) get past her(his) addiction to sex.
