Problems with Libre Office using Windows 10

Some months ago I decided to try using Libre Office instead of Windows 10, Word pad.
I'm 90 yrs old, and just can't wrap my head around Libre Office and I haven't got the time left to learn nor the energy and want to go back to using Word pad.
My problem: Every time I open a story in Documents instead of going to Word pad it goes to Libre Office. I wish to delete Libre Office and I'm concerned I will permanently delete some of my stories that are saved in Documents



Any suggestions?

Deleting an app shouldn’t remove files from the documents folder, but to be safe, copy all the files into a new folder, preferably on a different partition if available.
 
If you do right-click / open with, does it let you choose WordPad?
 
If you Uninstall Libre Office, your files should be unaffected. You can save them to an external drive just to be safe, of course. If you right-click on a document file and "Open With" it should give you an option to change the default app associated with the file type, whether or not you get rid of Libre. You can also manage that from your settings > Apps and Features, where you can select default programs (and it's also where you go to Uninstall).
 
Now...I wonder how to uninstall an Ap?
I just cant remember...I've done it many times in the past but...

Like @Plathfan says, deleting the app won't change any documents. However, in Windows, if you right-click on a file, you can choose Open As, and then whatever app you choose. You should have the option to "Always open with" the app you want.

If you accidentally saved a document in LibreOffice's own format, you might not be able to open it in WordPad. (I don't use WordPad, and rarely use Windows. It isn't on this computer I'm typing on.) If you have access to Google Docs (and you trust Google with your adult stuff) you can open LibreOffice ODT documents there and then save them in another format.
