I need to make a mother's day cake...

anyone have any really good tried and true recipes??
 
Gee.....I seem to have left my cake out in the rain and I'll never have that recipe again........

There is a great book about how to make really great cakes from a box mix plus a few more ingredients. I've made a few and they come out great!!

It's called The Cake Mix Doctor by Anne Byrn

One of the recipes I tried was a ginger pear cake. Easy and really, really good!

Are you sure you want a cake? If so, I've an old fashioned devil's food cake that's to die for...BUT it's not easy to make.

For this time of year, for Mother's day, I would recommend the most delicious Strawberry pie you'll ever have. Assuming no one in your family is allergic to strawberries *this* pie will really make a splash--I promise, they'll be licking the pie plate. Fresh, very right for spring, beautiful, and incredibly easy to make (just plan ahead as it needs at least 4 hours in the frige):

1 baked pie crust

2 baskets hulled strawberries
5 oz cream cheese
1/3 C heavy whipping cream
1 vanilla pod split so you can scape out the beans
Generous 1/4 C sugar

1 jar red current jelly

Whip up cream cheese, whipping cream, 1/4 C sugar. Scape in beans from vanilla pod and mix in well. Spread over pie crust (layer won't be more than about an inch thick). Place in strawberries cut side down. Just keep piling them on.

Place in refrigerator for 3 hours. Melt currant jelly in a pan until it's liquid. Drizzle over strawberries till pie glistens. Put in refrigerator for at least one more hour. Use a serrated knife to cut. Serves 6.

Mmmmm! God that sounds heavenly... I LOVE fresh vanilla bean...

but they requested a cake! *grumble*
